Founded by chefs Callan Austin and Darren Badenhorst, the intimate 30-seat dining room is intentionally dark, featuring veined-marble walls and focused downlighting that draws all eyes to the open kitchen. The 13-course tasting menu prioritizes fermentation and a zero-waste, "whole process" philosophy, pushing South African ingredients into experimental territory. Beverage pairings are a core pillar here, led by a dedicated sommelier team that crafts tailored sequences to match the kitchen's seasonal shifts. It is a highly staged, immersive environment that trades traditional white-tablecloth grandeur for a moody, nocturnal energy, further extended by its neighboring cocktail bar, Nocturne.
