Saoke.
Designed by Noriyoshi Muramatsu—the architect behind the global Zuma aesthetic—Saoke is a floating dining pavilion at JOALI Maldives that avoids the typical tropes of resort dining. Reached via a pier over the lagoon, the entrance is marked by carved stone and glowing sake bottles, leading into a space that feels more like a modern Tokyo design piece than a tropical hut. The menu is a broad study of Japanese technique, spanning delicate "new style" sashimi and Peruvian-influenced ceviche to charred robata meats and interactive teppanyaki. Open only for dinner, the restaurant is best experienced at sunset, when the open-air seating provides a front-row seat to the changing light over the Raa Atoll. It’s an intentional, high-design spot for those who value architectural pedigree as much as a well-marinated hamachi.
