The experience is choreographed like a private dinner party rather than a standard restaurant outing, limited to just 27 guests per night. The evening begins with aperitifs in a Scandi-style living room before transitioning to an open-kitchen counter where executive chef Torsten Vildgaard oversees a nine-course tasting menu. The cooking blends Nordic sensibilities with Japanese precision, utilizing high-latitude ingredients like Norwegian shellfish and Brittany turbot. While Dubai often favors spectacle, FZN opts for a refined, residential atmosphere defined by craftsmanship and a 1,300-bottle wine cellar. The night concludes on a quiet terrace for petit fours, offering a rare, understated vantage point over the city skyline.
