Located within the Iniala Beach House on Natai Beach, Aulis is Simon Rogan’s first venture in Thailand. The experience centers on an intimate 15-seat chef’s table where the kitchen serves as a stage. Eschewing a traditional dining room layout, the restaurant offers a guided sequence that begins with snacks in a lounge before moving to the counter for a multi-course tasting menu. Executive Chef Oli Marlow focuses on farm-to-table principles, sourcing ingredients from across southern Thailand to create hyper-seasonal plates defined by fermentation and precise technique. Expect vegetable-forward dishes and native seafood prepared in full view of the diners. It is a highly structured, immersive environment where the proximity to the chefs defines the evening.
