A portmanteau of "Taiwan" and "terroir," Taïrroir is Chef Kai Ho’s ambitious project to elevate local food culture through the prism of classic French technique. Located in the Zhongshan District, the dining room is defined by a striking ceiling installation of 1,876 suspended copper tiles that seem to flutter above diners. Ho, who refined his craft at legendary institutions like Guy Savoy and Jaan, deconstructs traditional Taiwanese flavors and reassembles them into artful, modern compositions. The menu is famously witty, featuring dish names that rhyme with local idioms, while the cooking remains grounded in hyper-seasonal ingredients sourced from around the island. From desserts infused with local tea to a wine program designed for precision pairing, the experience is a sophisticated, highly personal bridge between East and West.
