The restaurant operates on a hyper-local philosophy where nearly 98% of ingredients are sourced from the immediate surroundings. Rather than fighting the limitations of the mountain landscape, Wassmer uses them as a creative compass, resulting in a minimalist tasting menu that shifts radically with the seasons. The interior mirrors this Alpine purity, featuring serpentinite stone, ash wood, and a canopy of branches that frames an open kitchen. While the technical precision is rigorous, the atmosphere remains approachable and warm.
