Sibbjäns.
Set on a former horse ranch in southern Gotland, Sibbjäns is a regenerative farmstead, boutique hotel, and restaurant where sustainability shapes every detail. The kitchen operates on a strict farm-to-fork philosophy, drawing heavily from the property's own living-soil gardens, orchards, and pastures, where sheep and Mangalitza pigs roam. The rotating, hyper-seasonal menu is a showcase of Gotland’s agricultural calendar, complemented by local cheeses and island produce. Designed with a restrained Nordic aesthetic, the space features weathered wood, sheepskins, and curated local objects. Beyond the dining room, the estate offers a pool, a wood-fired sauna, and a yoga barn. It is a thoughtful, deeply grounded retreat that celebrates the island's natural rhythm.
