Paco Morales’s Noor is less a traditional restaurant and more a culinary excavation of Córdoba’s Moorish soul. Located in the Cañero district, the space functions as a "cultural project" where Morales—an alum of Mugaritz and El Bulli—systematically recreates the flavors of Al-Andalus using modern techniques. Each season focuses on a specific historical era, such as the 10th-century Caliphate or the 17th-century Golden Age, strictly utilizing ingredients available during those periods. The interior is a bright, minimalist reimagining of Mudéjar aesthetics, centered around an open kitchen where chefs assemble intricate dishes like almond and garlic soup with fig leaf oil or date-emulsion sweetbreads. It is a highly cerebral, chronological journey through Spanish history that feels both ancient and avant-garde, backed by a wine list of rare, biodynamic Spanish finds.
