Under Chef Vladimir Mukhin, the kitchen focuses on a "Russian Evolution" philosophy, reviving traditional Slavic ingredients and techniques through a modern, often experimental lens. Expect seasonal tasting menus where local products like salted swan liver or elk meat are transformed into avant-garde dishes.
