Located within the 14th-century Paço do Morgado de Oliveira at the Fitapreta winery, A Cozinha do Paço delivers a highly choreographed dining experience that moves through the historic palace’s various chambers. Chef Afonso Dantas focuses on a "memory-based" Alentejo menu, utilizing ingredients sourced directly from the estate’s kitchen garden and cattle. The meal is designed as a narrative sequence, guiding guests from the terrace through the original medieval kitchen before settling in the dining room for tasting menus paired with António Maçanita’s wines. In a deliberate subversion of traditional fine dining, the bread service is saved for the very end of the meal to encourage post-dessert conversation. It is a working estate where the agricultural landscape and the building's storied masonry are as central to the evening as the technical precision of the plates.
