Occupying a refurbished colonial house in Barranco, Mérito is the brainchild of Venezuelan chef Juan Luis Martínez, who applies technical precision honed at Central to a menu that bridges the culinary traditions of Peru and Venezuela. The space is defined by its rustic, earth-toned interior of adobe bricks and wood, featuring an open kitchen where diners at the bar can watch the assembly of inventive plates. The food is centered on the transformation of tubers and local proteins—think yucca quesadillas, glazed pork belly served with arepas, and a signature catch of the day with huacatay.
