Perched 3,500 meters above sea level, Mil is less a conventional restaurant and more a high-altitude laboratory for Andean biodiversity. Located directly overlooking the Moray archaeological site, the space serves as the headquarters for Mater Iniciativa, the research arm of chefs Virgilio Martínez and Pía León. The experience centers on an eight-course tasting menu where each "moment" represents a specific mountain ecosystem. Diners can expect indigenous ingredients rarely seen outside the Sacred Valley, ranging from extreme-altitude tubers and chaco clay to alpaca and local grains. The minimalist, mud-brick architecture framing an open courtyard encourages focus on the landscape, while the optional immersion program offers a deeper look into the surrounding botanical gardens and fermentation labs.
