Les Ambassadeurs by Christophe Cussac.
Located inside the Hôtel Métropole Monte-Carlo, Les Ambassadeurs by Christophe Cussac is a revival of the hotel’s 1920s gastronomic peak. Designer Jacques Garcia has reimagined the space with a palette of bronze, ivory, and gold, creating a warm, gilded atmosphere that feels more like a private residence than a formal hotel dining room. Chef Christophe Cussac, a former protégé of Joël Robuchon, delivers a menu defined by French precision and Mediterranean ingredients. Signature dishes, such as the sea bass tartare with Kristal caviar or the lobster lasagna, focus on clean flavors and technical mastery. The experience is punctuated by a sense of theater, from the open-kitchen views at the Chef’s Table to the impressive trolleys dedicated to house-baked breads and elaborate desserts.
