Located inside the Belle Époque halls of the Hôtel Hermitage, L’Abysse Monte-Carlo is a specialized omakase destination born from the collaboration between French chef Yannick Alléno and master sushi chef Naoki Kikuchi. The experience is framed as a "haiku to the Mediterranean," merging Alléno’s signature extraction techniques with Kikuchi’s disciplined Japanese precision. Rather than a broad menu, the restaurant offers a seasonal tasting progression that draws heavily from the Monaco hinterland and local waters. The design, curated by Laurence Bonnel-Alléno, lends a theatrical, modern edge to the traditional sushi counter setting. From the four-element thematic structure to the "amamis" dessert program by Valentin Mille, every detail serves a dialogue between two distinct culinary cultures.
