Roberto Solís, a pioneer of New Yucatecan Cuisine, stripped away the excess of fine dining to create Huniik, a compact 16-seat space that feels more like a private studio than a restaurant. Located in Mérida’s historic center, the interior was designed by artist Jorge Pardo, featuring textured golden walls and an open kitchen that dissolves the barrier between chef and diner. The multi-course tasting menu is a deep dive into regional biodiversity, sourced through direct partnerships with local small-scale producers. Expect traditional Mayan techniques reimagined through a modern lens—dishes might arrive in wooden boxes echoing "pib" earth-ovens, accompanied by a visual guide to the seasonal flora used in the kitchen.
