Tucked into a reimagined garage in Guadalajara’s vibrant Colonia Americana, Mecenas approaches mixology like a fine art. Named after Rome’s famous patron of the arts, the bar builds its entire identity around an ambitious in-house program, producing its own liqueurs, vermouths, and fortified wines in collaboration with local distilleries. Behind the bar, a color-coded rainbow of custom bottles serves as the backdrop for creative pours like the lavender-forward Jardín de Giverny. Under a moody, candlelit canopy of high ceilings and local artwork, the atmosphere is sophisticated yet relaxed. Chef José Luis Hinostroza balances the high-concept drinks with elevated, hands-on street snacks, ranging from bluefin tuna tostadas to a fiery fried chicken sandwich.
