Demo.
Located in a stark, monochrome space defined by black ash furniture and minimalist portraits, Demo operates with a split personality that sets it apart from the standard Vilnius brunch circuit. By day, it functions as a streamlined coffee bar and cafe, serving breakfast and lunch with a focus on precision and local sourcing. On select evenings, the vibe shifts toward a more ambitious culinary project led by chef-owner Tadas. The dinner service revolves around two distinct set menus—"Author’s" and "Farmer’s Table"—which prioritize environmental awareness by utilizing surplus and "imperfect" produce. Expect dishes that balance modern technique with regional nostalgia, such as suckling lamb or kogel mogel. It is a calculated, restrained environment where the industrial loft aesthetic meets a sophisticated, waste-conscious philosophy.
