The experience is defined by a rigorous focus on the natural essence of seasonal ingredients, sourced at their peak from across Japan. Unlike more boisterous kitchens, the approach here is quiet and meticulous, stripping away unnecessary flourishes to highlight the purity of flavors like matsutake mushrooms or pristine sashimi. The intimate space seats only 12 guests, allowing Amano and his wife to provide a highly personalized rhythm of service. A notable quirk in the traditional sequence is the timing of the soup, which arrives toward the end of the meal to signal the transition to the rice course. It is an exercise in restrained elegance.
