Spearheaded by sommelier Pietro Marchi, the concept relies on a scientific connection—the shared role of yeast in both slow-fermented dough and sparkling wine. The light, highly digestible sourdough crusts serve as canvases for gourmet, unconventional toppings, served by the slice as a tasting-style experience. Inside, the minimalist, bright dining room features prominent bottle displays, showcasing selections from both major Champagne houses and small vignerons.
