Since 1984, Cedroni and his wife Mariella have transformed this Adriatic outpost into a hub for avant-garde seafood, famously pioneering "susci"—an Italian reimagining of raw fish. The kitchen operates with scientific precision, using an on-site food tech lab to develop dishes that bridge local Marche traditions with global influences, specifically the Silk Road. Diners choose between a retrospective menu of classics and experimental journeys that utilize hyper-local produce grown in their beachside garden.
