Franco Cimini and Anna Caretti have spent decades turning this San Giovanni in Persiceto tavern into a temple of Emilian gastronomy. Designed to mirror a lost wartime osteria, the interior is a genuine collection of period tools and antiques rather than a staged set. The kitchen operates on a rare closed-loop system, sourcing much of its produce and dairy from the family’s own farm and cheese factory. This agricultural connection is best tasted in the signature tortellini with "affioramento" cream, a dish that has become a pilgrimage site for pasta purists. While the wood-fired grill handles high-quality meats, the heart of the menu remains rooted in local staples like tagliatelle with ragù. It is a family-run project where the rustic, lived-in atmosphere feels as substantial as the food.
