Chef Sabatelli’s menu reflects years spent in kitchens from Shanghai to Mauritius; he reinterprets regional staples with an outsider’s curiosity, yielding dishes like cuttlefish meatballs with nitsume or "plain" spaghetti enriched with buttermilk. The wine program is equally ambitious, managed by the chef’s son, Daniele, who oversees a cellar of roughly 3,000 labels.
