NAAR.
Tucked inside the minimalist, Bijoy Jain-designed Amaya estate, NAAR is Chef Prateek Sadhu’s high-altitude exploration of the Himalayas. This is destination dining in its purest form, requiring a deliberate journey into the hills above Kasauli for a 16-seat tasting menu experience that spans three hours. Abandoning the tropes of urban fine dining, the kitchen focuses on "cooking the mountains" through six distinct seasons, utilizing fire-first techniques and ingredients foraged or farmed from the immediate terrain. The meal is a choreographed sequence that begins in a side house before unfolding in a dining room where bare concrete and mid-century lines frame the ridges of Himachal Pradesh. It is a rare, quiet intersection of regional memory and modern precision.
