Domaine de Biar.
Domaine de Biar is a former 18th-century "folie montpelliéraine" that manages to feel like a remote sanctuary despite its proximity to the city. Set on fifty hectares of English-style gardens and meadows along the Mosson River, the estate is defined by its deep connection to nature and its active equestrian manade. The rooms are individually styled with a mix of historic bones and modern design, featuring elements like hidden doors, fireplaces, and clawfoot tubs. Sustainability is the guiding principle here, from the eco-responsible spa to the organic gardens. At the helm of the on-site restaurant, La Table de Biar, chef Mathieu Garcin prepares creative, hyper-local cuisine rooted in Languedoc terroir. It’s an ideal base for those who prefer horses and centenarian trees over typical hotel polish.
