La Grenouillère.
Set within a converted Picardy farmhouse on the Côte d'Opale, La Grenouillère is chef Alexandre Gauthier’s laboratory for "radical" contemporary French cuisine. The space, reimagined by architect Patrick Bouchain, features a striking metal-roofed dining room that blurs the line between the wild marshes outside and the high-energy open kitchen within. Gauthier’s menus are fleeting, hyper-local snapshots of the northern landscape, often utilizing an on-site forge and smokehouse to coax raw, poetic flavors from seasonal ingredients. While the setting is rural, the experience is avant-garde and immersive, ditching stuffy fine-dining tropes for a sensory-heavy "territorial odyssey." It functions as a true maison de cuisinier where the cooking is as sharp and unpredictable as the coastal weather.
