Occupying the former National Stud Farm built in 1752, Hotel Les Haras is a masterclass in adaptive reuse. Located at the edge of the Petite France district, the property honors its equestrian past through a sophisticated redesign by Patrick Jouin and Sanjit Manku. The aesthetic leans heavily on raw, noble materials—tumbled stone, massive oak beams, and saddle leather—to create a modernist atmosphere that feels both historic and high-end. While the 115 guest rooms are sleek and understated, the communal spaces lean into drama, particularly the former stable turned lounge bar. Across the expansive courtyard, the independent Brasserie Les Haras serves refined Alsatian fare under a spectacular spiraling wood staircase. A subterranean Nuxe spa, complete with a lap pool and fitness center, provides a quiet, contemporary contrast to the building’s 18th-century bones.
