Tucked away in the heart of Reims, Racines is a quiet exercise in precision led by Chef Kazuyuki Tanaka and his wife, Marine. The space is exceptionally intimate, seating only 12 to 15 guests in a minimalist, Zen-inspired dining room that looks out onto a Japanese garden. Tanaka’s cuisine is a technical marriage of Japanese heritage and French terroir, delivered through a "blind" tasting menu where dishes remain a mystery until they arrive at the table. The cooking is remarkably light, leaning on aromatic herbs and vegetables to create complex, artful plates. To match the food, the cellar focuses on depth over brand names, featuring over 250 champagnes with a particular emphasis on small, local producers. Due to the limited seating and dedicated following, securing one of the few tables often requires planning several months in advance.
