Nina.
Located on the sixth floor of The St. Regis Cap Cana, Nina is a sophisticated departure from standard resort dining. Conceived by Peruvian chef Diego Muñoz, the concept centers on the Quechua word for fire, utilizing open embers and flame-kissed techniques to anchor the menu. The aesthetic is intentionally bold, featuring deep teal walls, velvet banquettes, and striking local artwork that creates an intimate, art-forward atmosphere. While the foundation is Caribbean, the execution is distinctly Latin American, blending Dominican ingredients with Peruvian influences. Expect a range of textures from Atlantic crudos to tamarind-glazed pork belly and grilled meats seasoned with regional spices. It is a theatrical, high-design space tailored for formal evenings where the smoke and heat of the kitchen are as much a part of the experience as the expansive coastal views.
