Located within the Four Seasons at West Lake, Jin Sha is an exercise in refined Jiangnan aesthetics and regional gastronomy. The space, designed by Tokyo’s Spin Design Studio, mirrors a classical Chinese pavilion with dark timber beams and views over koi ponds and waterfalls. Under the direction of Chef Wang Yong, the kitchen elevates Hangzhou and Zhejiang traditions into "neo-classics" that emphasize seasonal, local sourcing. Signature plates include the pyramid-shaped braised pork belly with bamboo shoots and a Longjing tea crème brûlée that nods to the city's famous tea culture. While the dining room is formal and calm, the outdoor terrace offers a rare al fresco experience directly overlooking the hotel’s landscaped gardens. A curated selection of Huangjiu (yellow wine) completes a meal that feels deeply rooted in the local landscape.
