Copal Tree Lodge, a Muy'Ono Resort.
Copal Tree Lodge is less of a conventional resort and more of a massive, 12,000-acre ecosystem in Southern Belize. Perched on a hillside within a primary rainforest preserve, the property doubles as a working 3,000-acre organic farm. The twelve private suites and family villa are designed for low-impact immersion, featuring screened verandas that look directly into the jungle canopy for frequent sightings of toucans and howler monkeys. The experience is deeply culinary; guests can tour the on-site coffee and sugar cane plantations or visit the distillery that produces Copalli Rum. Beyond the farm-to-table focus, the lodge serves as a base for serious saltwater fly fishing and river kayaking. Two pools and a spa provide the necessary retreat after a day of guided jungle hiking.
