Set inside a historic boathouse directly on the shores of Lake Traunsee, Bootshaus offers a hyper-local dining experience that feels inextricably linked to the Salzkammergut landscape. Chef Lukas Nagl leads the kitchen with a "PUR" philosophy, focusing on unadulterated ingredients like Traunsee fish, bio-lamb, and vegetables from regenerative farms. Before dinner, guests are often shown a basket of the evening's raw components, which are later transformed using in-house ferments, garums, and misos.
