Tali Wiru.
Operating on a remote desert dune at Ayers Rock Resort, Tali Wiru—meaning "beautiful dune" in the local Anangu language—is an open-air, fine-dining experience rather than a traditional restaurant. Running during the cooler months, this highly exclusive evening is limited to a small group of guests aged 16 and over. The night begins at sunset with champagne, canapés, and didgeridoo music, framed by unobstructed views of Uluru and Kata Tjuta. Dinner is a structured, four-course table d’hôte featuring premium native Australian ingredients like kangaroo tartare and pepperberry, paired with regional Australian wines. Operated by an Indigenous food and beverage team, the evening blends high-end gastronomy with cultural storytelling and star-gazing under the southern night sky.
