Founded by MasterChef alumna Minoli De Silva, this Darwin city center destination bridges the gap between traditional Sri Lankan heritage and modern Australian flair. De Silva, formerly a chemical engineer, applies a precise, flavor-first approach to the menu, resulting in bold dishes like tamarind chicken and spiced lamb ribs that lean on Ayurvedic principles and local NT produce. The interior, designed by Scott Bagnell, reflects a "Tropical Modernism" aesthetic, meant to evoke a lush jungle town in Sri Lanka’s Hill Country. Beyond the signature hoppers and aromatic curries, the bar serves creative cocktails that incorporate island spices and tropical fruits.
